Blend details & guidance

Chicken biryani, and a very good pulao if you must stir

Biryani masala fails when it is just garam masala with more of everything. The two components that actually make it are shahi jeera and mace, and both are expensive enough that most blends skimp. Neither is skimped here.

The key ingredients of Chicken Biryani Masala, laid out on slate: black cumin, mace, dried rose petal and stone flower

Key botanical components

01
Shahi jeeraBlack cumin · Bunium persicum

Finer and sweeter than common cumin. This is the smell you associate with biryani.

Kishtwar, Jammu & Kashmir

02
JavitriMace · Myristica fragrans

The lacy aril around nutmeg. Floral, and the reason the rice smells of more than spice.

Kollam, Kerala

03
GulabDried rose petal · Rosa damascena

A small fraction, ground last. Traditional and easy to overdo.

Pushkar, Rajasthan

04
Patthar ke phoolStone flower · Parmotrema perlatum

Earthy and faintly medicinal: the savoury floor under the floral notes.

Nizamabad, Telangana

Storage guidelines

Store in a cool, dry place away from direct sunlight and heat sources.

To preserve volatile aromatic essential oils, keep box sealed or transfer into an airtight glass container immediately after opening.

Recommended culinary application

  1. 01Into the marinade, not the rice. It needs fat and time.
  2. 02Fry the onions further than you think is right. That base is half the dish.
  3. 03Layer and seal. Stirring a biryani makes a pulao.

FAQ

Asked and answered

About Chicken Biryani Masala. If your question is not here, ask us directly.

  • Yes. The blend contains no animal-derived ingredient and the box carries the green vegetarian mark. It was formulated against chicken because that is the harder balance.

  • The marinade. It needs fat and time to open up, and the rice takes on its aroma from the layers as the pot steams.

  • No. Its side panel carries the same three claims as every Koral box: 100% pure, no preservatives and no added colours.

  • It comes in a 100 g box. If you need a larger quantity for a restaurant, distributor or catering kitchen, tell us how much and we will come back to you. Ask about quantities

  • Keep the box closed, away from heat, damp and direct sunlight, and always use a dry spoon. Ground spice gives up its aroma over time, so it is at its best in the weeks after opening. The best-before date is printed on every box.
